  • 1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1 package (3 oz) raspberry gelatin (Jell-O)
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1/2 cup cold water
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1/2 cup raspberry preserves or jam
  • 1/2 teaspoon vanilla extract
  • Optional: Fresh raspberries for garnish

Instructions
 

  • Step 1:Prepare the Cake
    Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. Follow the package directions to make the white cake batter. Put the batter into the prepared baking dish and bake it according to the directions. The following procedure requires a fully cooled cake.
  • Step 2: Add the Raspberry Gelatin.
    Pour boiling water into a bowl alongside the raspberry gelatin mixture, then combine and stir until all crystals dissolve. After dissolving the gelatin mixture with boiling water, add 1/2 cup cold water before letting it rest.
    Push holes into the entire Cake using a wooden spoon’s handle.Distribute the raspberry gelatin mixture uniformly over the Cake while ensuring the liquid permeates its holes. The flavors will saturate during refrigeration over a minimum of 2 hours.
  • Step 3: Frost and Garnish
    Use a mixer to blend raspberry preserves with whipped topping, and add a teaspoon of vanilla extract until reaching a uniform mixture. Put the mixture onto the cooled cake layer. Disperse coconut flakes evenly over the top surface.
